Right near Cordes-sur-Ciel, on the northern boundary of the Gaillac vineyard, the Gayrard Estate is being fully renovated Pierre Fabre took over the family property in 2013 with the aim of bringing their 5 century wine-making traditions to life.

An agricultural estate (with vines, cereal crops and truffle-growing), specialised in olive cultivation, with an olive grove, an oil mill and shop (which sells oil, table olives and local specialities).
The Domaine de Rigaud is a farm (vineyards, cereals, truffle growing), which has diversified into olive growing. The adventure began in 2010 with the planting of olive trees in scion.
The estate now has a professional kitchen open to the oil mill workshop (where workshops with chefs will be organised regularly), a shop with all the estate's products, as well as various local products (wines, honey, etc.), and a processing workshop that will lead to new olive-based products.

Tour quiet easy around Najac to discover very old fountains in wooded and quiet surroundings. Start possible from the holiday village VAL-VVF at the locality Puech Moutonniers.
Essential to the village life the fountains were supplied by drainage water from the Terre-Rouge/La Planquette plateau. They are called “griffouls”.
The first fountain was built in 1344 in the Bourguet area into a granite block. Some ancient consuls and bishops faces are sculpted on it. The fountain was used until the beginning of the 20th century.

Nice footpath with varied landscapes. First part on the hills and trip back along the river Aveyron with shade, ideal place when the weather is warm. Several places of interest all along the tour. Start possible from the Holiday Village VAL-VVF.
The Chestnut tree was (with the rye) the basic foods for a long time. It saved a lot of inhabitants from the famine in times of scarcity.

Tour approachable for everybody around the hamlet of Mergieux. However some parts have a difference in height quite important. This tour do not start from Najac, it is accessible by car or from the tours n°6 and n°8.
The main part of this tour is in the forest. Some conifers were planted for the forestry development but the broad-leaved trees constituted the forest cover until the early 20th century. The forests around Mergieux holiday village are use by the ONF (Forestry Commission).

Some winegrowers have diversified into olive growing, sometimes even converting to it, simply because they are passionate about it or because the climate is changing for the worse. However, growing olives is not the same as growing vines. This is a major challenge, because while some wine-growing land may be suitable for olive cultivation, its long-term profitability remains subject to the risk of a water shortage or the severe frost still possible in our region. It's a challenge that a few people have decided to take up, betting on a quality market, the craze for short circuits, little local competition and the revival of a somewhat forgotten method of cultivation.
The combination of trees and vines, known as agroforestry, is an ancient practice that has long shaped Mediterranean landscapes through the trilogy of olive trees, vines and wheat, and is still practised in some parts of Europe, where cherry trees, peach trees, almond trees and truffle oaks are still grown alongside vines. Trees limit climatic excesses, improve the soil and, by bringing water up from the depths to the surface, also improve water resources. They also create biodiversity, helping to combat pests by providing shelter for their natural enemies.
